I was wondering if anyone could explain to me where i can find information on this in the game and what difference it makes to the overall financial system?

This is how much income is made on matchdays that isn't through tickets sales and hotdogs, etc. It's more leant towards restaurants and executive box income.

The higher the level of this, the more income is brought into the club

is this shown in the income screen as match day income? or is that something else?

That is correct, it's included in the accounts section under the general Match Day Income.
