Do you really have to watch the full match to be able to mould your match tactics to fix problems? Personally I like to watch the extended highlights because 40 odd matches per season, watching the full event takes more time than I have.
Problem is - I have NO IDEA most of the time what the effects of my tactics are, because my assistant manager doesnt tell me, my players dont tell me, and I dont watch the little blobs for the full game.
I can appreciate that one would have to watch an entire game to see if players are getting caught out of position, are being outclassed, aren't quick enough, not doing the right thing etc. But if thats the case, why is the option there to not watch?
All depends on you really, i know some guys who don't watch period, they base it on stats and commentary. The old skool way of playing which I sometimes turn to once in a while
I used to watch the first friendlies at full length, when creating a new tactic.
After getting used to how thing works and what the different sliders affects, and I feel that the tactic is starting to look the way I want, I could switch to extended.
Then after 5-10 matches, I could go over to watch only key highlights - because I feel that the tactic is strong enough.
Then if I get in trouble, and only then, I will switch either to extended or full.
So my answer to your question: I think the option not to watch is there for those who dont have the time, just want to have fun or for those who thinks their tactics is good enough to beat the most teams.
If you have no idea what effects your tactic have, but dont want to watch highlights or the full game, you should take the time to look at your players stats after the match. You know, where it says pass completion, tackles won etc. From these things you can actually learn a lot.
Is your DMC with 20 for passing having very low pass completion? Might be that he dont have any passing options, so you might narrow or widen the tactic, or change his passing instructions.
So it is possible to understand tactics without watching any games, but it will probably take a lot more time, and can be extremely frustrating.
