Unfortunately they are totally ahrd coded into the game. You may see pictures of pitches with advertising boards around them and stuff, but this is a bit of a cheat and it is done by changing the background picture. Great when you're in a match. Bad when you're not.

Oh well, guess i'll have to put up with the constant mid-august pitch then

Anyone know if they will be skinnable in the next game?

Pitch isn't skinnable and it's unlikely to be in the next version either
