I always build sides with Determination, Teamwork and Work Rate
 Me too. I won't buy any player unless they have decent attribute scores for these areas. I also prefer if possible to get players with high composure and decision making since these now seem to be much more important in the game since FM08.
I'm pretty much obsessed with Pace. I no longer sign anyone with less than 12 pace; they are essentially too slow and will miss chances when counterattacking or can't chase up strikers for defending.
I just have a glance for workrate if the players are midfielder, esp DMC
Thre's no stat that I constantly pick over all others across all positions.
I had a look across my squad to see if there's any I subconsciously pick, and it looks like I have a peviously unnoticed preference for balance. I have no players in my squad with balance less than 12.
Also of note is composure. Well over half my squad has 20 for composure, but of the remains, almost all have less than 5.

Watched Neil Warnock for the past 8 years?!
You poor, poor, poor, poor bloke.
Trust me.. watching Neil's blades for the last 8 years was less stressful and disappointing than watching Robson's blades for the last 8 months. </BLOCKQUOTE>
Depends, work rate and determination if a LLM are great because they're icing to individual stats. I like technique in youngsters, me and my mates came up with that theory during fm06 and served us well.
Physical stats as well are important. Sod being the best potential striker in the world if you have no physical presence (looking at you Balotelli!)
I've got to admit I am lazy with some signings - I don't take enough notice of some of the mental stats, I just look at physical and technical attributes useful for the position and then take a quick "broad brush" glance over the rest of the attributes to check there isn't anything too nasty.
