I am looking for the skin that is similar to the default one currently used in FM. However, the menu bar is on the right hand side AND MOST importantly the players are not in a long list but are in two columns like the old days.

Can anyone point me in the direction of this skin?

er..... yeah. Use the metallic (right) skin and select overview -> position on the squad screen.

well to get the players in the two columns all you need to do is go on view and change it to positions or somethin along those lines, thats not the skin that does that.
Or download the new patch, that puts that view as default.
