Saving Derby from relegation is always fun trying to get one of the Scottish teams(I usually choose Hibs) to compete against the Old Firm is a challenging game too due to the pitiful transfer budgets they have available

I would agree on both, Derby is a challenge but if you manage to keep them up you do have a lot to work with stadium and facilies wise.

Hibs is fun to try and break the Old Firm stranglehold on the SPL. I am in my second season with Hibs right now.
