He's not old, but amazingly Efe Echanomi makes a brilliant tutor, even though he's 20 and plays for Leyton Orient reserves. You can get him for £10k or something, and he has the following preferred moves: Runs with ball through centre, places shots, likes to try to beat offside trap and gets crowd going, perfect for your pacey striker tutee (Saivet or whoever). Combine him with Bristol City's Brian Wilson for the ultimate combo, he'll cost you 500kish and can teach the kids how to get into opposition area, get forward whenever possible and knock ball past opponent.
Matteo Ferrari is a good one for your centre backs if you can get him. Costs about £3m I think at the start, and he can teach: Plays short simple passes, marks opponent tightly, tries to play out of trouble, stays back at all times and does not dive into tackles.
Carlos Martins of Recreativo for about £1.6m is good for centre mids with a high Long Shots rating. Shoots Long, Shoots with Power, Uses Outside of Foot, Dictates Tempo, Tries First Time Shots and Tries Long Range Passes.
