Perhaps a stupid question, but what do the different colors of the stats mean? Has it got something to do with the potential growth a player can go through?

...and no, it is to make it easier to spot the higher ratings at a glance. Research has shown that the human brain responds to COLOURS in a way that acts sa filter, so if you are looking for high attacking attributes, you will eventually learn approximately where they are on the screen and your brain will automatically filter out colours it associates with higher and lower ratings in these areas.
I believe the rating of 15 or above will turn the colour to orange.
