In 2006 and also in 2007, I have always adopted 2 tactics. A Home and an Away.
Home tactic I have as attacking football, keep the visitors on the back foot, and putting some hard tackles in to keep them nervous. Remember you have the backing of your fans behind you also.
Away I tend to be a little more cautious, as you said, an extra man in midfield to break their attacks down. Also consider playing a bit narrower to keep things tight. As opposed to being at home you like to play with width and open up the opposition.
The best advice is to go with your own gut instinct, if it works fantastic  if it doesn't, ask yourself what went wrong. If you only lose 1-0, you can safely say that you put up a good fight. Get a thrashing, and I'd go back to the drawing board and rethink.
The only occassion I would be happy to use one set of tactics is when I feel I have the best players in the league. Which isn't often.
Good luck, and just keep testing
