I've had real problems trying get any benefit out of the player tutoring function.

Perhaps theres something i'm not doing properly...?
I get someone like Dani Alves/ Lionel Messi to tutor a regen (of the same position) but every time the player comes out having gained nothing or they hate each other.

I've tried it about 5 times now and basically it causes more problems than it solves. Anyone else having this issue?

You've got to be careful as to make sure the tutor and the youth player that is being tutored have similar personalies.

Otherwise they'll clash.

But the reverse side of the coin is, that even though they get nothing from it, I've has one youngster become much better mentally.

You have to match their personalities for it to be effective. This can be difficult though as their personality is determined by hidden stats.

First thing to do is check player's personalities\descriptions against possible tutors cos if you find a decent match there's a good chance the link will be a success. If there's no relevant info there then check the players mental attributes - obviously a high determination indicates a determined personality, whereas high teamwork might indicate loyalty, etc. You can also judge personalities by how players respond to media interaction.

Beyond that it's just trial and error, but when you create the link be careful which option you choose as this determines how long the link is expected to last.

"can learn from" is a short (~3months)
"would benefit from" is medium (~6months?)
"ideal role model" is long (~9months?)

So it's advisable to choose the lowest option first time around to find out it's going to work out.

Those players you mentioned, Messi and Alves both have determined personalities so you'd need to link them with regens with high determination.
