Arsenal's passing style is without doubt short & slow.
I think people are getting confused because they have fast players and you're misinterpreting their actual passing style because of the pace of their players when they are running with the ball etc....
When they have the ball, it's not like they first time pass all the time, they keep the ball and work it around until there's an opening to exploit

from one thing i noticed on saturday against tottebham the stikers and midfield except gilberto close down rapidly get tight to the player and look to pressure them rather then make the tackle. also ture needs pretty high close dwn, mentalitry and cf. with through balls and runs. just some ideas, also the wide outs play alot deeper lower mentality and fwd runs. with full backs attacking hard with fwd runs. basically turn off crossing for wide players and set it to byline and often for fb. this is how arsenal generally attack wide over the years, pires and ljungberg looking to link up strikers with passes to feet an runs into the box.

as arsenal ive been playing wuick tempo, i might have a look at this
i try and play the old arsenal way against lesser teams with 2 ams but 451 at home

I'm not a tactics expert, but I had to put team mentality on the defensive side to resemble the way Arsenal plays in real life (mixed focus on possession and fast attacking). Don't cross often. Henry as a striker with defensive mentality and Rosicky as left winger are nice candidates for a free role, but one of them is enough.
Through balls for the midfield are a must, obviously. Defend deep, but not too deep (mixed results with counter attack, which lets them play even deeper). Closing down should be flexible. The more you dominate, the more you can afford to stand back a little.
BTW, I had a breakthrough (10 shutout wins in a row) after a slow start when I put tactics training on extensive (all the way to the right), could be a coincidence though. While I had some great games, I still have some problems to get Fabregas and - to a lower extent - Henry to "work", i.e. resemble their RL counterparts.

There's nothing wrong with my remarks, but it's been a while since I wrote it and I haven't played Arsenal with the full version yet, so it would be silly to give more details. I'd just start with a basic 4-4-2, with Rosicky/Hleb as ML/R or maybe even AML/R, and tweak from there.
The hard part is to get the full backs right, because you have to get them forward often to emulate their real life style (especially Eboue). With the current match engine, that's a very dangerous thing to do. The AI will use available space on the wings to its advantage.
