I don't think it is, or should be, an "either or" proposition.
I think SI's job is to walk that fine line - to decide for each feature "How do we present this in a way that is both realistic and fun?"
There should be "guardians" of both in the SI team, and the best ideas are going to be the ones that both guardians approve of wholeheartedly.

Realism should serve to make the game fun.
Realism should set boundaries for how we have fun in a simulation, but it should not be the end-all. Fun is the end-all, realism its means.
Those who want ultra-realism at the cost of fun can pour water on their heads when the FM weather says shower and abuse themselves when the commentary says "X hits back at manager" :p

That's true that is doesn't need to be either or.
I find that lack of realism takes the fun out of most sports games now, on 360, PC whatever it doesn't matter that standard has been set in the sports gaming world and games demand realism.

I don't think the two are mutually exclusive, and I would fall on the side of wanting complexity and realism, but as Serpico says above you need a balance. It is only a love of football in general and this series in particular that keeps me playing through the repeated seasons of mediocrity.
I've found with 08 I can storm through the lower leagues (Blyth to the Premier Division in 8 seasons) but really struggle at the top level (relegated immediately and now falling to bits in the Championship). The games I've played from the start in the top leagues have seen me routinely stuffed by an unforgiving AI, as my lack of degree in FM science means I can't cut it at the highest level. I think this balance is oh so nearly right, but I think while realism does make some of the fun, it does go just a wee bit too far at the top.

If SI could continue the realism within the game, and produce a realistic 3D engine, I think I would quit my job and just play all day.
