not really much you can do but you could always try and defend deep if you see that you are not in control of the match might sound stupid but if you leave it with the same tactics you started the match lets say for the last 10 mins of th game you are bound to suffer a late goal anyways. if im loosing 1-0 with 10-15 mins to go then i put my team all out on attack and 7/10 i score a goal sometimes enough to equalize or maybe win a watch so i suppose thats the AI does aswell

Avoid the trap of setting a very defensive mentality and deep defensive line. It invites pressure and you suffer a lot of turnovers on your own half.

Keep the mentality at a balanced level, lower creative freedom, closing down, width and tempo for entire team. Set forward runs to rarely for all defenders and midfielders. Remove any forward arrows and tick the counter attack box.

Now you have a team that tries to stay behind the ball at all times, doesn't stray out of position, moves the ball upfield, away from your goal, towards the forward(s) who lurk up front waiting for a chance to counter attack.

Chipawah's solution works well.

Ironically if you are a better team than the team attacking you, you can counter it by going very offensive your self. I tried this based on the theory that the can't score goals if they are camped in their own half.

A little correction:

Don't set your closing down too low, this will create last minute tackles inside your penalty area, resulting in giving away penalty shots, which is the last thing you want to do.
Keep it reasonably low (7-11) so that your players do make the tackle before the opponents walk into the penalty area with the ball.
