Im in 2013 now and to be honest ive always had problems defending, its lucky i can score a lot of goals else id be in the conference by now, I usually have the 2 CBs set to ultra defensive and little crative freedom and long ball passing, the RB and LB i try between normal and mixed running etc, basically the standard settings, but usually change this to defensive with long passing and no running up etc..i would say ive never had the quickest of defenders, accelaraton and pace usually below 15, probs this is my problem, doesnt help when i bring the defensive line deep, any tips would be nice, thanks all!!
If you play deep dline you allow strikers closer to your goal,so you should also tight mark them. I always turn off their FWR, RWB and TTB (so that they always play simple).
I am not sure that long passing is necessary, unless this is part of your attacking plan. I give them team passing and set them to passing=10 only if I play with very short passing.
Anyway, you should take a careful notice how you concede, and change your settings to counter the most obvious threats. Dline and opposition settings are very important, so pay attention to them before every game and set them according to the opposition threats.

If you score lots of goals, then you probably play quite attacking football. By setting your DCs mentality to ultra def + lowering your def. line you provide opposition with a lot of space in the middle => AI has space to build attack against you. So I would try to keep DCs mentalities closer to normal.
You did not provide any details on your midfield settings, as well as closing down, tempo and width, not to mention formation. Defense starts from forwards, so if you rely solely on you back four while others stay up...
