Anybody who is 40+ is officially considered "too old", I won't pay for a player over 35 and will never offer longer then a one-year contract for 35+ players.
As a result I almost never have players older then 34 in my team |

No age is too old if they player can/will perform.
Like Dirk Dork, I also have an aging player who is improving in stats. My Billericay captain is now 34 and his average rating have improved in each of his 4 seasons, which includes getting promoted twice. Yet my former goalkeeper retired aged 28, though it was due to a back injury.
I recall signing a 41 year old once who did OK for six months. I knew I should have paid our BUPA fees |

I tend to look at their performance first and age second.
Just on my past save I've had my 38 year old player/coach GK step in admirably for seven games after my first team GK was given a seven game ban for a professional foul. incidently, I would have loved to seen what that foul would have looked like on the new 2D match engine.
I have to agree with those above. You need that experience at the lower levels. You even get the odd player still playing for his country into his 40's doing very admirably against anything but the hand of God.

Over 30 is definately time that players leave, unless they are a player/coach.
I will get rid of anyone over 26 when I have plenty of money to throw around, although I might relax those restrictions on 'superstars'.
