Will is be possible for me to take a screenshot of a current skin on a certain page, and just edit over it in photoshop and then slice the images?

You can use it as a layout and work over it for positioning. It's possible to edit it too, but since it's not layered it will be a pain to do.

Slicing the images can be done with ImageReady of just use guidelines and copy paste the parts... (it's al in square format though, so if you want rounding menu bars or something and maybe even transparent you have to build it up in layers and save the elements/layers as .png)
