1. When some of my players are being man-marked, is there any way to get rid of the opponents?

Yeah,

if you set your passing to 1 (short) you will play 1 touch passing. Obviously you need a highly skiled side for this.

Another option would be to make your tempo fasto

You just need pacey and good passing players etc to take advantage of the extra space if the opponent man marks. Now, if you mean specific marking then changing where your players play or having the swap position thing in individual instructions can put them off.

I do not know about 2.

3. Maybe lower run with ball (if they are holding it but not standing still). Make individual passing style shorter. You can make the team tempo quicker but that affects the other players as well.

They are holding the ball and not moving without the hold up ball instruction.
