What is vastly important if you have such a player (Crouch, Vidic etc.) have him attacking the far post on corners and aim all your corners there...watch how many goals he gets by simply sticking his napper on it.

I wanted to add something to this discussion but from another angle. I don't play with a target man but I was always on the receiving end of thrashings from teams using this tactic.
So, I have spent alot of time coming up with tactics to negate this. Perhaps understanding what I do to prevent it will help you overcome the defence and score even more goals.
Firstly, the combination of the tall target man and fast, pacy striker was once my worst nightmare (my worst moment in my managerial career was a 7-3 thrashing from a lower positioned team). So, how I overcome this now is by:
1. Having a DMC (I usually play with 3 DC's and 2 DMC's) meet the ball when played long to the target man. I do this by adjusting the Defensive line and mentality of the DC's and DMC's.
2. I then have my fastest (but not necessarily my best tackling) defender in the middle of the park to clean up anything that makes it through the the fast striker.
This tactic works well for me because I get lots of possession and by the time my fast DC has mopped up the potential chance, the opposition has pushed forward. This gives me plenty of space and opportunity to play in my own fast strikers with a through-ball.
So, my input is this. If you are playing this target-man tactic, try to make your target man go wide and have him knock the ball down to a pacy winger instead who can then place a nice through-ball or cross for the striker. The reason I know this works is because Valencia started to do this with me and:
A. I couldn't get my DC's into positions (or my DMC's) where they could cope and I ended up having to defend for my life for 60 minutes in one game. Thankfully they have not repeated this tactic (so please don't remind them).
B. When I did get a hold of the ball (usually in the wide areas), I couldn't play my strikers in early enough and the opposition had enough time to re-organise their defence.
I can normally come up with good counter-measures against most tactics but this was one that gave me massive problems.
So, it may be worthwhile someone trying to play with two tall target men (running into the wings with SARROWS), knocking the ball down for pacy wingers and perhaps have a fast AMC pushing through the middle.
I don't know that I can come up with a way to combat this one. But if this does work, please don't let SI incorporate this tactic in future for the AI or I'll be doomed.
