So I'm looking for advice on how important it is to play a player in their natural position. Say if a striker had good stats for wingers would he play as well on the wing?

If you are retraining him there at the same time then yes he should be fine.

I think a lot of beginners (me included) get/got very worried about playing AMR/L's who may only be "competant" or less at MR/L, when it really doesnt matter. Overall I would say stats are more important than the position descripions, just about anyway.
