Do Coaches Stats improve like players do. Because I'm considering signing Paulo Maldini, but I am shocked to see that his defending is only 10.

yes they do.
something to note as well...
lets say that Coach X have 20 in Attack Coaching and if you put him to coach the Attack Category his "Attacking" stats will start to decline after a few seasons

that doesn't make much sense, dont you mean:

Coach X has 20 in Attack Coaching and if you put him to coach the Defence Category his "Attacking" stats will start to decline after a few seasons

no...i meant what i said.

it is make this way so that one coach wont last you for 10seasons.

if you have a coach with 7stars in X catagory after 3-5 seasons go check again it will most prolly be 6stars unless the coach is still improving...
