I nearly fell into that trap, I started a thread on it a while back. I had been at Man United 4 years and had won the league every season, but never the Champions League, and I was offered the job at Barca at the end of the season. I noticed the transfer date was going to be before the Champions League Final so I reluctantly turned it down.
None of the save game editors currently available allow you to adjust future manager transfer dates, at least as far as I know. The only way around it that I can see is to ask to delay your decision until the end of the season. If they agree, they will probably come back to you on the same day as you would have been transferred i.e. before the Champions League final. So you have to ask to delay your decision a further week, if they accept you should then be able to make your mind up after all games have been played. That is what I did when I did eventually leave Man Utd to go to Milan - and it paid off because my last game was a win in the Champions League final!
Basically its a bit of a flaw in the game which hopefully will be fixed next year.
