Jumoping is very important for heading but it is clear that a 6 foot 3 inch striker with good jumping will outhead a 5 foot 9 inch DC, so height is a issue as well, altho not as critical as you might think.

From personal experience in the lower leagues, I signed a 6' 4" beast into my side who had only 10 for jumping, 12 for heading. He was easily outperformed in terms of headed goals by my 5' 11" striker with jumping of 16, 11 for heading.

A gap of 6 points wouldn't make that much difference if height were the dominant attribute (with that whopping 5 inches there (no rude jokes)).

It affects it, I would argue, against similar players, but if there's a big gap between their stats. I'd ignore height and go on jumping. Basically, what FrazT says.

Klose is 6' 0" on the game. Bet he gets more headed goals than Crouch (6' 7").

Only pay attention to the jumping attribute. Contrary to what you may think, it doesnt actually tell how good someone is at jumping, it only tells how high someone can reach with his head.

Height and weight are pretty cosmetical.
