I would of thought if you make the coach too good then the AI will auto adjust his attributes to suit, like it does when you create a player using the editor

I fixed it courtesy of Higginz fron FM Sorted.
The trick is to put most of his other stats as 1 to balance it out when the game calculates everything.
Here's what I've got for Moniz.
Current Rep = 145
Home Rep = 150
World Rep = 150
Current Ability = 150
Potential Ability = 165
Determination = 14
Man Handling = 12
Youngsters = 19
Coaching = 16
Coaching Technique = 20
Hardness of Training = 14
Discipline, Judgement, Judging Potential, Motivation, Coaching Attacking = 0 (Left to be randomly generated)
All others = 1
As I say, don't be alarmed at the amount of 1's as the game will take his ability in to account and boost them accordingly anywway. By putting this is, He had 20 for Coaching Technique in the game, and when selected to do Ball Control only in trianing he had 5 stars. Which is what you expect for someone like him.
