Usually I keep my workloads heavy too. I keep them just one shy of that little white line on the right. Most older players will be happy with it but the youngsters are not although they dont really say anything. The only problem with losing the defensive stats is that the concentration might go down which, although not key for the attacking players, is pretty important else they just tend to relax a bit. You wont notice it in the game I suppose but it'll effect the performance a bit. So be sure to give them a little defense training as well. Too much isnt required.
As for losing familiar Arsenal players, I'd say try to get the younger ones back. Guys like Denilson, Fabregas (if he's gone to Spain, he'll have a release clause) in particular. You could also start training Merida a LOT because he becomes very good later on. He could then be used in your midfield. Make Pirlo tutor him, it should work I think. You could also train Nordtveit to be an out-and-out DM and he becomes very good too. If you want to keep Song, then train him heavily in one area (either DM or CM). He should become good as well. The problem with Song is that whenever I see him name in team, I always get a mental image of his hair and that makes me drop him!!!
You could also look to get Fabrice Muamba back from B'ham. He becomes a quality DM (atleast in my game). He's an ex-Gooner too. Lupoli from Fiorentina becomes a brilliant little striker. Again, an ex-Gooner. Wont recommend those whining little s***s Bentley, Pennant & Aliadiere.
