What individual instructions could be set to a goalkeeper in order to increase/decrease his natural tendency to rush out for the ball ?
could it be mentality ? closing down ? a mix of the two ?

mentality, i always have it at 11 IIRR.
i have CD quite low (around 3/4) for a keeper as this means they won't come out of their goal much at all when an opponent is in possession and therefore reducing his chances of being lobbed.

| ok, so if i understand your answer correctly, you dont want your GK to rush out too often, so you set a low closing down, and this has nothing to do with mentality

...and this leads me to another question : does the characteristic "rushing out" describe the tendency to rush out (i.e. a GK with a 20 will always rush out) or the ability to make the right decision to rush out or not ?

with mentality being partially a positioning stat, if it's high then he's going to have a bigger radius from his initial position to move in. a low CD will mean he won't rush out to try to win the ball when an opponent is in possession.
therefore, i'd want my GK to rush out to long balls over the top so that a quick opposition ST doesn't latch on to them for a one on one chance.
it might also depend on your defensive line as you may want to raise your GK's mentality if you have a high d-line.

| hmm, not sure. decisions and anticipation will help with this. the rushing out stat will probably mean how good he is at dealing with a 'rushing out' situation.
eccentricity will determine how often he comes out of goal, hence why you don't want it too low (5-10).

rushing out in terms of what a keeper does is how well he comes out to meet the player attacking him, i.e he will come out at the best time and take up the best position relative to the striker and the goal.

| does this actually work...if so it would be invaluable info to me as i like to play attacking football but get nervous with the amount of space behind my defence

| yeah, that's probably true, but shows the importance on mental stats for a keeper - positioning, anticipation and decisions in this case.

well, in FM06 i had de sanctis who was quite eccentric. in a lot of games he often used to come too far out of his box and an opposition ST used to just chip him all the time.
this got me quite frustrated, especially as he kept doing it and was sometimes letting in goals that the ST wouldn't have scored from because the angle was so tight.
so after reducing his CD to around 3, he stopped doing this and i loved de sanctis again as my defensive record was a little better.
