Personally I'd start as Juventus as they are down a division and have a powerful team... You can afford to make lots of mistakes.
There is a thread at the top of the tactics page that is called the tactics bible or something like that. You should go through there as there are good articles which tell you how to set up tactics and training and so forth.

Real Madrid isn't easy to use for a total newbie. Faces stiff competition from Barca, Sevilla and Valencia and can easily struggle in Primera Liga. As Dayle said, try Juve. They have a hefty sum of cash to spend and Serie B is easier for you to have a go since your team is the best in the league.
