... is it acceptable to buy/sign players from previously managed clubs without scouting them first?

I can't beleive that you are serious when you ask this.

You have managed that player (for a number of years, perhaps) and know his strengths and weaknesses. What do you think is the realistic thing to do?

And yes, I do know that it's rude to answer a question with a question.
