I am currently with Real Madrid on my second season. My assistant and scouts tell me that old players like Cannavaro, Dudek, Van Nistelrooy, Guti, Raul etc.., dont have real future at the club or should be offloaded. They dont perform that bad but their attributes have been declining. Note that they all have one year left on their contract. What should I do? Should I renew their contracts and wait till they decide to retire or let their contracts expire.

I'd let their contracts expire.
No point renewing - they'd still want massive wages, and huge signing-on fees.
Better to put that money towards new players.

Depends on who you have to replace them. Get rid if you have some one equal or the same, otherwise keep them until you do or they retire.

You can also keep them if you want some depth in you squad.

If they are still playing well and are an important part of the team, offer them another year long contract. If not, just release them when it expires.
