I understand, and I'm aware of the frustration when your opponent knocks in a goal on 95 minutes.
But it's also pretty nice when you yourself score the winner on 95 minutes
It's all swings and roundabouts really.
Extra time = after 90mins when the scores are level in a cup
Injury time = legacy name for what is now called 'stoppage time'
Stoppage time = takes account of goals, bookings, substitutions, and some stoppages. It is a minimum number of minutes.
The point being that because it is a minimum amount of time, there can (and often should) be stoppage within stoppage time. This is reflected in FM. However, it rarely occurs in real life, where refs rarely even get to the minimum.
Usually for me it doesn't go more than a minute over, but there is the odd game where 3/4 minutes of extra time turns into 7/8, which is a bit annoying. Luckily I'm yet to concede a late goal in any of these instances.
I think the point isn't that there's too much stoppage time being alloted but that the clock goes on for longer than the stoppage time given ie the clock stops after 96 minutes when 4 minutes were added on.
And the opposition always seems to score in those last two minutes.
