To my knowledge:

FC is like Wayne Rooney. Not an out and out striker per se, but one who's sorta like a playmaker. He drops back slightly to midfield to pick up the ball, then perhaps assists the ST if applicable, or scores on his own if he can.

ST is like Ruud van Nistelrooy. Basically waits for service and finishes off chances. The 'fox in the box' if you like. Scores the most goals I would think.

In FM terms, an ST can just play up front, an ST can either play in a free role or as an attacking midfielder as well as up front. That is the only difference. However you may find that the players attributes tend to be slightly different to match those extra positions (e.g. FCs being more creative etc). But two players, identical in everyway except one being an ST and one being an FC, given the same instructions etc will play exactly as well up front.

Thats pretty much it. ST are poachers, look for the killer pass (Torres, Bellamy, Anelka, etc), whereas a Fwd, looks to chase the ball, make things happen (Crouch, Kuijt, Drogba, etc)

fc are players like cantona, rooney, who drop into the 'hole' if you will, whereas str tends to be the furthest layer forward or target man type player
