Will all the graphics files I have for Fm2006 work for FM2007? Do I just copy them into the relevant folder in my new FM07 game, or will this not work?

All the graphics apart from skins will work with FM2007.

Though you now install them into:
\My Documents\Sports Interactive\Football Manager 2007\

Rather than into the game folders, this means you don't need to bother deleting graphics that come with the game.

will that include 3d style players, and utilites like edt and ddt files.

Yes players will work, edt and ddt files should work. (Unless they have been changed, but they don't look like they have - check the editors forum for more info).
