Is there a way to set the u-18"s and reserves formations different to the first team without taking charge of the team yourself?

Above options go to "Manager", then
"Options" you will come up with a screen which basically tells u who is controlling what. On there untick box which has " Use current match tactics".
And also on this screen is the options for who you want to control the reserves & youth teams,ok

No i believe you have to take control of the first team aswell.
