how do you do this? it says you can in the manual. Manager, options but there is nothing there!

I would guess by leaving your players in genrel training

Depends which version your playing. I believe it was an option until 2006. From FM2006 onwards they changed the training engine and so to make your assistant take care of training you just leave it well alone and they all get trained in the general tab. I think thats the best you can do now.
