currently thinking about reshuffling my team with the idea of revolving around having a 3 man defence, whilst accompanying my current star players. But with 3 man defence how much cover do you need? Is one DMC enough or do you need two? Or perhaps 2 wingbacks and a combination of wingbacks and DMC?

It depends on the abiliteis of the other teams in comparision with yours. WHilst having 4 in defence will work against anyone, having 3 only works if you have 3 very capable cnetre backs against sub standard attackers.

However, having 2 wing backs gives you another dimension to both your attack and defense. FOr some reason, I find my wingbacks (who have great stats in the nesscary areas) are left stranded and leave the 3 centrebacks to stop an attack from the wing (which is very difficult)

In conclusion, 3 centrebacks does work if they're good enough, and wingbacks do help slightly, but not much

In my experience, unless you have 3 world class centre backs, playing 3 at the back does not work.

Even if your centrebacks are world class you still get overrun and always get that nervous feeling whenever the opposition attack.

Of course the way around this is to play with an extra DMC or wingbacks - but then having extra men doing a defensive role negates the point of switching to 3 at the back in the first place...

Well, if you look up my post called (TFJ)3-3-2-2 you can download a tactic with a 3-man defense. To be honest I think it works reasonably well. Just keep in mind that opposition instructions are crucial. Take a look at it and see if it works for you.
