I assume you are talking about FM08. In the demo, you cant. Its restricted only to English clubs and Scottish clubs I think. You'll have to wait until the game is released.

WHS^^^, except you can manage italian, spanish and french (I think)

When you start the game and add a manager, just choose whichever club or country you want to manage. That simple!
