How a player reacts to any sort of arrow, be it a farrow, barrow or sarrow, is to do with his decision making.
For example, if you play with 3 central midfielders like such:
<--CM CM CM-->
The player will be a central midfielder, his primary job for the game is to play in the centre, but at times he will drift out to the side, when appropriate. For example, if you're in posession, he might drift out to the wing to make some space. Yet, if you've lost posession, he may still drift outside if the opposition are attacking down that side.
What I'm trying to say, essentially is that a sarrow won't specifically come into play for one reason (e.g. in posession, not in posession, attacking, defending, etc...), but will be used when necessary. Obviously a player with a poor decision making stat might drift out when he shouldn't. Similarly someone with poor off the ball, might not move out to the side when he should.

Thanks for all the replies, I guess there's lots of different opinions as to how they work or maybe it varies depending on the players position or decision making?

That makes a lot of sense and explains why I thought their effect was ambiguous, and how to combat this ambiguity.
