It depends on resources. This is my set up, ideally (the one I try to use when I manage Villa):
Assistant Manager - Covers all disciplines. I look for an Ass. Man who is strong at judging ability, judging potential, discipline, motivation, mental and tactical knowledge. I'll often set up the filter to cover all of them (around 14+). If I get a number of results, I'll then opt for the assistant who has the best balance of attacking, defending, technical, and tactical stats.
9 coaches - 1 for each discipline. I filter coaches by their relevant stats (e.g. Defending 18+), and then from the results I try and sign the coach who has the best balance of discipline, motivation, and working with youngsters stats.
1 first team coach - Covers 6 disciplines (all but fitness and goalkeeping). I look for similar stats to the assistant manager. Essentially, the first team coach for me, is a coach being primed to take over as an assistant manager in years to come.
1 youth coach - Covers 6 disciplines (all but fitness, and goalkeeping). I look for similar stats to the assistant manager or first team coach, but with more importance on Judging potential, and working with youngsters (subsequently other stats can be 12+)
Usually, this puts me above my recommended coach allowance (the board usual says max. of 8, and this is 11 coaches). If I can get any more, I try and get a second goalkeeping coach, and a third fitness coach (who will cover both fitness disciplines).
I make sure I only make changes to the back-room staff, or the training schedules during pre-season. I don't know if it makes any difference, but I don't ever want to disrupt momentum during the course of the season - and it also gives a chance for the training to actually have some effect before the season starts.
