how to set the side back and the defender?

Pick your team. Go to the tactics screen. Click player instructions. Click on "set to". You will then see a list of all the player positions.

Click the arrow to the left of each of your players in turn. You will then be able to set your players to in game default positions. that will enable you to get started.

sorry,what I mean is how to set their defensive mentality,marking type,the level of closing down and so on.

If you look in the thread called 'unnofficial tactics bible' there's a whole section on everything you need to know about setting the defenders up. It helped me a lot.
