What your saying is a) you don't know how to play the game, and b) you don't know how to play football.
If you have a creative midfielder, give him more creative freedom than most other players, and if he is especially good, consider a free role or playmaker role. The stats I normally look for in individual instructions are as follow:
Forward runs: Off ball
Run with ball: dribbling
Through balls: passing
Cross ball: crossing
Of course these are not exclusive, it depends on the player as a whole and also your team tactic, because you dont want one person to be playing a totally different game to the rest of your team.
As with defenders, keep it simple for them so they aren't caught out of position. Rare on everything except maybe through balls which you could have on mixed if they have good passing and decisions, but be careful incase they play a pass and it goes to the opposition, it could cost you a goal if your defence cannot pass. Creative freedom low, mentality defensive-normal depending on your style of play. Closing down rare, so they dont go for the players and get caught out of position.
As for strikers, depends what their attributes are like as to how to play them. Perhaps a Target man style, with plenty of crosses, or a fast striker style with lots of balls played infront of him or to his feet for him to run with.
