Can't say I have seen much of Sevilla playing under Ramos, but from a general game point of view, if they keep possession a lot and play slow build up then perhaps short would be best. If the play quick counter attacking then direct perhaps. However, the build up can perhaps be put down more to tempo.
If they look to play the ball forward to a man further up thr field then that would be direct. If they just look to pass to the nearest player to them, generally holding possession, then short is your best bet.
Possibily just telling you things you already know, but you can always try out both under test conditions and see how they perform. Whichever you think seems right will undoubtedly be the best way for you if you are trying to recreate a Sevilla style play.
