Well his mentality should depend on where you have the mentality of your strikers in my opinion. You should probably have the AMC's mentality no more than one or two notches below those of your strikers. For example in my game I play with a target man and an AMC. The AMC has a mentality of 15, the target man has a mentality of 11 (it's low so that plays deeper in midfield), and my other striker has a mentality of 16. So you see how the AMC is only notch below my most attacking player.
Now for creative freedom. I usually give all my players (except the DCs) the creative freedom that is indicated in their attributes. So lets say Ronaldinho has 19 for creativity so I give him 19 creative freedom. Basically I let him use as much of his creativity as he can.
His passing I usually put on team. I usually have all my midfielders, strikers and fullbacks on team passing.
For closing down I put him on the last notch of mixed, which is setting 14 if I'm not mistaken. I don't really want him to close down too often because he's the playmaker and should get more into good attacking positions instead of chasing around after the ball all the time.
