I would like to know if you could make players do a few of these things.

Can you make your two wingers keep switching sides etc to confuse the opposition? and to make them leave open spaces, if so how do you do this?

Also what is the best way to constantly get one player to take 2-3 opposition players with them to leave big gaps, i want to really exploit the opposition and try and make a tactic like this.

You can go into player instructions and then use 'swap position' to get your Ronaldo/Giggs style side swap. I guess someone with very high forward runs/runs with ball in player instructions that is good at dribbling will drag a couple of defenders out of position. How successful it is depends on the opposition player instruction, if their defence has closing down set very low, they will likely not bother chasing the player around and defend more in zones.

As well as pauls suggestion, try hold up ball. Although, the designated player would have to be strong on the ball, and by the sounds of it you're planning on doing this with a winger, its highly unlikely.
