You can use the multi select feature to scout all the players at once from a certain team if you want.

yet but in the assigment drop down menu there used to be a tab allowing you to continously scout 1 club

Ah, I see what you mean. The option used to be there in the scouting options, it isn't any more. What I've suggested is just an alternative way of doing it.
