If I were to use a home tactic away, which would only be if im playing a team divisions below me or my away tactic hasnt worked recently, then I would use Home-Alt. I never use Home (the original) anymore and stick to Home-Alt anyways.
Grizzie, I tend to go for TM with better overall physical stats including balance, strength, natural fitness, and stamina... but Bianchi isn't too bad of a choice. I would still side with Eddie Johnson but that is just my personal choice.
If i were you, I would purchase AVB from Anderlecht (Borre if you dont know him) to help out in defense if anyone is injured. Once Vela develops he will become an amazing AM, so you could get by with Hleb or Rosicky until then. I would also train Fabregas to play as AM as well as CM for away games. I would let RVP play LM and look for a RM player, possibly in exchange for Hleb or Rosicky. I tend to go for Ribery as he is excellent and the trade is quite realistic. You will also want to consider upgrading both the left and right wings, as Eboue and Clichy aren't good enough just yet to take the premiership on. If you can afford Alves, I would trade in Eboue for him and pay a little extra -- he is very good. For the left side, see if you can get Chivu from Roma, hes very good at both left and middle.
On the topic of Targetman, I have found Zigic from Racing to be another amazing TM. At 6'8 with 20 in heading, 20 in jumping, 17 in strength, and 16 in finishing he is very good. He is a tad more expensive and will not join you in Arsenal the first season, but he is a great star possibly for the future.
Other than that, your Arsenal team are pretty set to go. You now just have to find some youngsters to follow your 1st teamers footsteps. Ive found a good targetman in most games will be Laurito, although it varies. The french teams have lots of young wing/striker talent such as Kevin Monnet-Paquet, and Italy tends to create some good goalkeepers and strikers. Other than that, it all depends on your game :]
And last question: I only change the sliders if im at home and am down, in which case I up the mentality to be more attacking (naturally). If im losing away and its getting late, I normally change to the Home-Alt tactic because it is more attack minded.
