How do i know if the Opposition have changed their tactics for example Mentality or Tempo etc...??

Normally, the AI will make some change to their formation screen, even if it's just a change of the length of arrows.

If they don't, the only way to tell is by watching the game and picking up on clues just as you would if watching a normal real life match, I'm afraid.

I would add also that if you notice a significant change in possesion, but no formation or arrow change, the ai may have switch either to a attacking pr defending variation.

If its any help, I have had more luck with my formations attacking the attacking formations and playing more defensively against the AI defensive formations, as the AI counterattack is very nasty.

The AI 442 with no arrows is and the 442 with 2 small farrows the AI uses a lot in defensive and attacking mode.

Usually it switches to the attacking mode when it needs a goal. Also, if you are a high ability premiership side, the AI almost always starts with a defensive 442.

Yes, should have mentioned that! The stats, particularly possession, action zones and pass completion can give you a good idea if the balance of the game is swinging one way or the other, and usually denotes a change in tactics. Simply put, if you're losing out in these areas it's probably time to change something.
