Some of my most loyal players are well past their career but I can't find any option to hire them? Cudicini is 38 on my game, his personal says he would like to be an assistant manager. When I offer him a contract the Job is greyed out but he wants a Manager/Coach Job release Clause?

I think its pretty interesting if I can hire these loyal players as club staff, but how do I do it?

You can only hire them if they have a staff profile. If they don't then they will retire and disappear off the face off the earth!
What you could do is interact with him and say 'you think he'll be a good assistant manager' that might work and he might stay on as a coach.

İn the contract offer screen,you should be able to see 'player' thing,click it,then you'll see,'player/coach,player/assman,payer/scout etc.

Player > Player Interaction > Player would make a good coach.

If he agrees, he might have a new staff profile.
