I created a team and swapped them for Watford, now when I go to start the new game on my own database, i cant choose england as one of my country's, they are gone?

Check you still have all the required teams for the english set up, (ie) 20 premiership teams etc, if you haven't it won't allow this league to be played.

I had this and found I'd accidently taken Burnley out of the league, leving the Championship with only 23 teams.

If a league is missing it is definitely because the wrong number of teams is available, so go through all the English leagues and make sure they all have the correct number of teams.
