It's not good that so many people made mistake that it has become an acceptable spelling.

Anyhow, how can they be interchangeable. Surely if espresso means "to press", expresso means "without pressing" or something like that?

According to the dictionary, espresso came from the latin ex- and premere: meaning to press out.
