Hi,
I started a new game with Arsenal, and have 3 physios, but in the "Training > Coaches" screen only one is disponible. The other 2 arent here. Someone know why?

Available is the correct word. So let me write it again:
I started a new game with Arsenal, and have 3 physios, but in the "Training > Coaches" screen only one is available. The other 2 arent here. Someone know why?

No physios should be available in the Training > Coaches screen - They do not participate in training players.

Are you sure they are fitness coaches, not youth coaches?
Try offering them new contracts
