In real-life this is exactly what can happen. In the game it won't.

Yes, it does reflect real-life - to what extent at higher levels I don't know. But at the lowest levels (my experience) you have players registered with the club, but who don't play regularly who can be called on in an emergency (or who are trialists - players who train with the club, but aren't registered as players). If the club makes payments (most of the clubs I've played with I've had to pay them...), then they will pay the player (in my experience they were one-off payments for the match, not a 'wage').
What also sometimes happens is that the player registered doesn't actually exist (or is someone who quit football, but is still on the books) and whoever is available to the team (usually some bloke from the pub) will play under that registered player's name. Commonly known as 'ringers'.
